Chef Marcus Guiliano to continue seminars at 2021 Hudson Valley Food & Wine Fest

One of the most anticipated facets of the Hudson Valley Wine & Food Fest each year is the presentation throughout each day of live food and wine seminars featuring some of the greatest chefs and wine experts in the nation. And one of the perennial favorites of those seminars is the one given by Chef Marcus Guiliano, owner with his wife Jamie of the fabulous Aroma Thyme Bistro in Ellenville, the first Certified Green Restaurant in upstate New York.

Chef Guiliano has for almost two decades been a staunch advocate for healthy, sustainable, local and real food. After a youthful career spent making his name in five-star restaurants in New York and Europe, he discovered his ultimate mission in cooking when he reversed a handful of medical conditions, including 28 years of asthma. The chef has mastered the ability to turn natural, whole food into something beautiful and flavorful. His menus feature focused, natural cuisine that reflects balance and well-being. His consistent objective is to create meals that achieve impact through focusing on pure ingredients and limiting manipulation. To achieve this objective, he avoids the use of butter and heavy dairy products, white flour products and refined sugar that mask food’s natural flavors. Everything he cooks is, not surprisingly, supremely delicious, as well as optimal for your health.

Guiliano’s epicurean expertise extends deep into the wine list as well, which makes his presentations extra relevant at the wine festival. Aroma Thyme has had a Wine Spectator Award-winning wine program since 2003, and it’s been their mission to source independently produced wines from all over the world. “I love wine” says Chef Marcus. “I taste every single wine that I buy. I want to make sure I know what we are representing. I am constantly learning something new in the world of wine.”

The Hudson Valley Wine & Food Fest takes place at the Dutchess County Fairgrounds on Saturday and Sunday, September 11 and 12, 2021.
